Our story

From Guizhou to Tallinn

Every great dish carries a story, and ours began generations ago in the mountainous province of Guizhou, in southwestern China — where dumpling-making was never just a recipe in our founder's family, but a tradition passed down from her grandparents.

When she moved to Tallinn for her MBA, she found a city rich in culture — but while pelmeni were everywhere, she missed the real thing: authentic jiaozi, thin-wrapped and bursting with filling, and the crisp, comforting warmth of true pan-fried baozi. So in 2024, she opened Jioji, to bring the real, diverse tastes of China — hand-wrapped, the way her family always made them — to Tallinn's table.

The process

Four steps. Zero shortcuts.

01 — Filling
01

Mixed fresh, every morning

Pork, shrimp or vegetable filling, prepped from scratch before service — nothing arrives pre-made.

02

Pleated by hand

Every wrapper closed by hand, one at a time. No machine has ever touched a Jioji dumpling.

03

Steamed soft, or seared crisp

Jiaozi go to the steamer; baozi hit the pan for a golden, lace-thin crust on the base.

04

Plated hot, chili on the side

Out of the kitchen and onto your desk, your platter, or your event — the same wrap every time.

No pre-made dough. No factory filling. Just the wrap.
